Menudo: A spicy Mexican soup often made with tripe (cow stomach), menudo (not to be confused with menudo, which can make a hangover worse) should cure even the most lethal hangovers. It should stimulate the senses, rejuvenate the inside and clear the mind.
Menudo is usually served with chopped raw onion, oregano, diced red pepper (usually serrano), and lemon or lime wedges with corn or flour tortillas.
The average woman needs about 2,000 calories per day to maintain her weight and 1,500 calories per day to lose one pound per week. Meanwhile, the average man needs 2,500 calories to eat and 2,000 calories to lose half a pound per week. However, it depends on many factors.
It is usually pork or chicken, but we prefer the healthier chicken version of this extremely relaxing dish. Posole is filled with garlic, chili, onions, lime juice, and my favorite, hominy (corn with much more nutritional value). Suddenly it doesn’t look bad to get sick.
Hominy is a low-fat, easy-to-eat food. One serving contains around 119 calories and 1.5 grams of fat. If you count carbohydrates, it’s around 24 grams, but the good news is it’s a good source of fiber (4.1 grams).
Nutritional value per serving: 403 calories 153 calories from fat 17g total fat (5g saturated fat 4g monounsaturated fat)
Hominy is made from whole kernels of corn that have been soaked in a solution of lye or lime to soften the hard outer shells. The kernels are then washed to remove excess solution, shell and often bacteria. (Do dry hominy like dried beans.)
Meat. Although you need protein, too much ketosis bothers you. Choose thicker cuts of meat if you have a choice (rib, pork), as well as offal like heart, kidney, liver, tongue, and tripe.
Share on Pinterest Liver is rich in vitamin A, folic acid, iron, and zinc. Liver is the most nutritious of all offal and a powerful source of Vitamin A. Vitamin A is beneficial for eye health and for reducing diseases that cause inflammation, including all diseases from Alzheimer’s to arthritis.
Beef is made up of the muscle wall (by removing the inner lining) of the first three chambers of the cow’s stomach: rumen (blanket / flat / smooth buttocks), lattice (gingerbread and filling bag) and omasum (book / Bible / tripe leaf)).
