Definition of Activity sampling:

It relies on the observations made over a period to record what is happening at that instant, and the frequency at which one or more activities are being performed. Also called work sampling.
(In work study) a form of sampling in which a large number of observations are made of a group of machines or workers over a period of time in order to predict what percentage of the total time is occupied by any one activity.
